Japanese Chicken Wings

Great for crowds and kids! Tastes good warmed up if there’s any left.

Ingredients
  1. 3 lbs. chicken wings, tips removed 1.5 kg UPDATE: Buy drummettes and remove skin – it’s more work, but it’s healthier
  2. 1 egg
  3. 1/3 cup flour 75ml
  4. 1 cup butter 250ml
Sauce
  1. 3 Tbsp. soy sauce 45 ml
  2. 3 Tbsp. water 45ml
  3. 1 cup white sugar 250ml
  4. 1/2 cup vinegar 125ml
Instructions
  1. Cut wings in half. Dip in slightly beaten egg and then in flour. Fry in butter until deep brown and crisp. Place in shallow roasting pan. Mix all sauce ingredients together and pour over chicken wings. Bake at 350 F (180C)
  2. for 1/2 hour. Baste wings with sauce during cooking.

Ingredients
  1. 1 pkg. fresh spinach
  2. 1 head butter lettuce
  3. 2 cups fresh bean sprouts
  4. 1 can water chestnuts, drained and sliced
  5. 3/4 cup bacon, cooked and crumbled
Dressing
  1. 1/2 cup salad oil
  2. 1/4 cup sugar
  3. 1/4 cup ketchup
  4. 2 Tbsp. red wine vinegar
  5. 1/2 tsp. Worcestershire Sauce
  6. 1 small onion, finely chopped
  7. 1/4 tsp. dry mustard
  8. 1/2 tsp. salt
  9. 1/4 – 1/2 tsp. cayenne pepper
Instructions
  1. Wash spinach and lettuce, drain and dry. Combine dressing ingredients and blend til smooth. Set in fridge for at least 1 hour. Add dressing just before serving.

A great last minute dessert. One family always takes this sailing – Now it’s called “Fruit Cockpit Cake”.

Cake
  1. 2 eggs
  2. 1 1/2 cups sugar
  3. 2 tsp. baking soda
  4. 1/2 tsp. salt
  5. 1 – 14oz. can fruit cocktail with juice 398mL
  6. or crushed pineapple
  7. 2 cups flour
  8. Sauce
  9. 3/4 cup sugar
  10. 1/2 cup milk
  11. 1/2 cup butter
  12. 1 tsp. vanilla or 2 Tbsp. rum is a superb substitute!
Instructions
  1. To make cake: Beat eggs. Add all ingredients, except flour, and mix. Add flour and mix again. Grease a 9 x 13” pan or a bundt pan and pour in mixture. Bake at 350F for 45 minutes.
  2. To make sauce: Heat sugar, milk and butter in saucepan and bring to a boil. Remove from heat and add vanilla. Pour over hot cake. (Makes a lot, but use all of it! The cake will absorb it.)
  3. Serve warm with whipped cream or frozen vanilla yogurt. Keeps for several days refrigerated (if no one knows it’s there).

Ingredients: 16 slices white bread, crusts removed 16 slices Canadian back bacon or ham 16 slices sharp cheddar cheese 6 eggs 1/2 tsp. pepper 2 mL 1/2-1 tsp. dry mustard 2-5 mL 1/4 cup minced onion 60 mL 1/4 cup finely chopped green pepper 60mL 1-2 tsp. Worcestershire sauce 5-10 mL 3 cups milk 750 mL dash Tabasco 1/2 cup butter 125 mL Special K or crushed Corn Flakes Instructions: Set 8 pieces of bread into a 9″ x 13″ (23 x 33 cm) buttered, glass baking dish. Cover bread with slices of back bacon. Lay slices of cheddar cheese on top of bacon and then cover with remaining slices of bread to make it like a sandwich. In a bowl, beat eggs and pepper. To the egg mixture add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco. Pour over the sandwiches, cover and let stand in fridge overnight. In morning, melt butter, pour over top. Cover with Special K or crushed Corn Flakes. Bake, uncovered, 1 hour at 350 deg.F (180 deg.C). Let sit 10 minutes before serving. Ingredients
  1. 3 Tbsp. salt (approximately)
  2. 1 cucumber
  3. 3 Tbsp. sugar
  4. 2 Tbsp. vegetable oil
  5. 1 thinly sliced Spanish onion
  6. 1/4 cup white vinegar
  7. 1/4 cup water
  8. Lee Hong’s Cucumbers
  9. Excellent relish!
Instructions
  1. Arrange cucumber slices in a bowl in layers salting between layers. Let stand 2 hours. Stand bowl under fawcet and let cool water run through gently until no salt remains. Drain well. Add sugar and oil. Mix and add onion, vinegar and water. Add more sugar or vinegar if not sweet or sour enough. Relish should stand a few hours before serving. Great with steak or chicken - hot or cold.

  1. 2 cups flour
  2. 1/2 cup sugar
  3. 1 Tbsp. baking powder
  4. 1/2 tsp. salt
  5. grated zest of 1 lemon
  6. 1 egg
  7. 1 cup milk
  8. 1/2 cup butter, melted
  9. 1 cup fresh, frozen or canned blueberries
Topping
  1. 1/2 cup melted butter
  2. 1 Tbsp. lemon juice
  3. 1/2 cup white sugar

Instructions
  1. Mix flour, sugar, baking powder, salt and lemon zest in large bowl. Beat egg in medium sized bowl, add milk and butter. Add egg mixture to dry ingredients. Stir unti just mixed (batter will be lumpy.) Stir in blueberries. Fill muffin pans 2/3 full and bake at 425 F. for 20 minutes.
Topping
  1. Combine melted butter and lemon juice. Measure sugar into separate dish. Dip tops of slightly cooled muffins in melted butter, then sugar. Makes 16 large or 32 small muffins.

Ingredients
  1. 8 phyllo pastry sheets
  2. 1/4 cup butter, melted
  3. 4 boneless, skinless chicken breasts, halved
  4. 1 bunch fresh spinach, stem removed
  5. 1 bunch fresh basil leaves, chopped
  6. 1large red pepper, cut in strips
  7. 3/4 cup Feta cheese, crumbled
Instructions
  1. Lay 1 sheet of phyllo on counter and fold in half (not length-wise). Brush melted butter on edges. Place one half chicken breast in the middle, near the bottom of phyllo. Layer spinach leaves, a sprinkling of basil, a few pepper strips and some Feta cheese on top of chicken. Roll chicken and phyllo over once. Fold edges toward the middle and continue rolling to form a small rectangular package. Brush with a little butter. Place on a cookie sheet and cover with a slightly damp cloth while making the others. These can be wrapped in plastic wrap and refrigerated overnight. Heat oven to 375 F. and place rack in middle of oven. Bake for 25-30 minutes. Serve with vegetable couscous

A guaranteed hit – just don’t tell the guys about the artichokes!

  1. 2 – 6 oz. jars marinated artichoke hearts
  2. 1 small onion, finely chopped
  3. 1 garlic clove, minced
  4. 4 eggs, beaten
  5. 1/4 cup fine dry bread crumbs
  6. 1/4 tsp. salt
  7. 1/4 tsp. each: pepper, oregano and Tabasco sauce
  8. 2 cups grated sharp cheddar cheese
  9. 4 oz. jar pimento
  10. 2 Tbsp. snipped parsley
Instructions
  1. Drain liquid from 1 jar of artichoke hearts and discard. Drain liquid from the other jar into frying pan. Add onion and garlic and saute. Chop artichokes into quarters. Combine eggs, crumbs, salt , pepper, oregano and Tabasco sauce. Stir in cheese, pimento, and artichokes. Add onion mixture. Pour into 9″ square buttered baking dish. Sprinkle with parsley and bake at 325 F. for 30 minutes, or until lightly set. Cut in 1″ squares.
