I call this soup “new world” because it’s a variation on the classic French leek and potato soup, using sweet potatoes and peppers, two ingredients that Christopher Columbus introduced to Europe during his explorations of the Americas. Serve small quantities as a prelude to a celebratory meal, or add a tossed green salad for a light supper.
Curried Apple and Sweet Potato Pilaf

Ingredients
- 1 Tbsp. (15 mL) olive oil
- 1/2 cup 9125 mL) chopped green onions
- 2 garlic cloves, minced
- 1 cup (250 mL) uncooked long-grain rice
- 2 cups (500 mL) water
- 1 1/2 cups (375 mL) peeled & diced sweet potato
- 2 cups (500 mL) peeled & cubed Granny Smith apples
- 1/2 cup (125 mL) frozen green peas
- 1/4 cup (60 mL) currants
- 1/2 tsp. (2 mL) curry powder
- 1/2 tsp. (2 mL) cumin
- 1/4 tsp. (1 mL) salt
- pepper to taste
Instructions
- Heat oil in a medium saucepan over medium-high heat. Add onions and garlic; saute 1 minute. Stir in rice and saute 1 minute. Add water and sweet potato; bring to a boil. Cover, reduce heat, and simmer 15 minutes, or until liquid is almost absorbed. Stir in apple, peas, currants and seasonings. Cover and simmer 3 minutes, or until thoroughly heated.
