Pork Pozole
The robust flavors in this traditional Mexican dish are delicious and perfect for a casual evening with friends. Add the chipotle pepper if you like heat and a bit of smoke. To continue the Mexican theme, serve with a tossed green salad that includes a diced avocado, and warm fresh tortillas.
Christmas Morning Wife Saver
Superb and a Christmas tradition across Canada. Make it the day before and then simply pop it in the oven in the morning Serves 8
- 16 slices white bread, crusts
- removed
- 16 slices Canadian back bacon or
- ham
- 16 slices sharp cheddar cheese
- 6 eggs
- 1/2 tsp. pepper 2 mL
- 1/2-1 tsp. dry mustard 2-5 mL
- 1/4 cup minced onion 60 mL
- 1/4 cup finely chopped green pepper 60mL
- 1-2 tsp. Worcestershire sauce 5-10 mL
- 3 cups milk 750 mL
- dash Tabasco
- 1/2 cup butter 125 mL
- Special K or crushed Corn Flakes
- Set 8 pieces of bread into a 9″ x 13″ (23 x 33 cm) buttered, glass baking dish. Cover bread with slices of back bacon. Lay slices of cheddar cheese on top of bacon and then cover with remaining slices of bread to make it like a sandwich. In a bowl, beat eggs and pepper. To the egg mixture add dry mustard, onion, green pepper, Worcestershire sauce, milk and Tabasco. Pour over the sandwiches, cover and let stand in fridge overnight. In morning, melt butter, pour over top. Cover with Special K or crushed Corn Flakes. Bake, uncovered, 1 hour at 350 deg.F (180 deg.C). Let sit 10 minutes before serving. Serve this with fresh fruit and hot cinnamon rolls.

Turkey Mole
In many parts of Mexico, no special occasion is complete without turkey cooked in mole poblano. The authentic dish is quite a production; this simplified version is delicious nonetheless. Serve with hot tortillas, fluffy white rice and creamed corn.
Indian Style Cashew Chicken
This rich, comforting mélange is called Indian_Style to distinguish it from Thai Cashew Chicken, which is a very different dish, although equally delicious. Serve this over brown basmati rice with zesty mango chutney, but other robust fruit chutneys work well, too. Add a green vegetable, such as steamed broccoli, to round out the color palette.
Cabbage Borsht
Served with dark rye bread this hearty soup makes a soul-satisfying meal. It has the best flavor when it’s made with a combination of beef and vegetable broth, but if you’re a vegetarian, vegetable broth works well, too.

Black Sticky Rice Pudding
Years ago, when my husband, daughter and I traveled in Thailand, we became addicted to mangos and sticky rice, a truly delicious sweet. After our return, we tried but could never duplicate the superb taste and texture of the authentic version. Although this black sticky rice pudding is a different dish, it reminds me of that delightful concoction. In fact, it’s so good you don’t even need the fruit. Although it’s high in saturated fat, it comes from the coconut milk, which may have healthful benefits.
Red Beans and Red Rice
Here’s a fresh twist on the classic Southern dish of red beans and rice. Bulked up with muscular red rice, this is very hearty — with the addition of salad, it’s a meal in itself. The green peas add a burst of color, making this a visually attractive dish that looks good on a buffet. It is particularly tasty as an accompaniment to roast chicken or pork, or pork chops or a platter of roasted vegetables.
