I first tasted this delectable combination many years ago in Charleston, South Carolina, and I haven’t been able to get enough of it since. Serve this to guests for a special lunch with a crisp green salad or fresh asparagus (which provides folate, among other nutrients; see Mindful Morsels, page 164) in season. Or just it enjoy it with your family, as I often do.

- 1 lb. lean hamburger 500 g
- 1 cup chopped onion 250 mL
- 1/2 cup chopped green pepper 125 mL
- 1 cup sliced mushrooms 250 mL
- 1 - 28 oz. can tomatoes and juice 796 mL
- 1 handful spaghetti, broken 1
- 1 cup water 250 mL
- 1 1/2 tsp. Italian seasoning 7 mL
- salt and pepper to taste
- 1 cup grated Mozzarella cheese 250 mL

Instructions- Brown hamburger and onions. Mix in green pepper and mushrooms and cook for a few minutes. Add tomatoes with juice, broken spaghetti and water. Stir. Add spices. Cover and cook about 15 minutes, or until spaghetti is tender, stirring occasionally. Add cheese and stir until melted. Serves 4-6.

A serving of Shrimp ’n’ Grits provides folate and vitamins B6 and B12. This triumvirate works in concert to recycle artery-clogging homocysteine into methionine, an essential amino acid that helps your body to perform many important functions. Moreover, although researchers don’t understand why it works, a recent study reported that a combination of B12 and folate taken after a stroke reduces the incidence of subsequent hip fractures.
